The vineyard

It is a very densely spaced vineyard with 6 foot isles and a meter between plants. We feel this helps control the plant vigor and produces a rich fruit. This is the first harvest, handpicked by 27 friends and neighbors. It was a cool, wet year weather wise resulting in a later harvest. This year we picked on September 29. The predominate vines bearing fruit were 777, 667 and Pommard clones.

Wine making

The grapes were handpicked on 9/29 Fermentation took place in 1 ½- 2  ton fermentation bins with 20-30% whole clusters added to the destemmed grapes.

It was then aged in 50% new French Oak barrels for 8-10 months. A total of 50 cases were produced.

 

The wine

This wine has typical varietal aromas and processing bouquets of spicy red fruits (cherry and red currant), raspberry, Clove, nutmeg, and Cassis with a round finish. It has a lighter red color than the 2006 vintages. The tannin structure is more pronounced, suggesting that this wine should be decanted for at least 15-20 minutes before consumption.

Food

It pairs with  lamb, salmon, pheasant, ham. Dark Chocolate is also a great match with this wine. Pare with cheese I would suggest a mild Cheddar, plain Chevre goat cheese, Roquefort, Feta, Havarti.
