Wine making
Chemekata grapes were harvested 10/10/08 at 22.6 Brix,
PH 3.32, TA 6.0. Red Hawk Grapes were harvest 10/10/08 at 22.4 brix, PH
3.28, TA 6.13. All juice fermented in Stainless Steel and NO malolactic
Fermentation. All of the lab trials and most of the actual performance
of wine making duties were performed by Kim Kramer-Krieger, the daughter
of Keith and Trudy Kramer of Kramer Vineyards.
Only 195 cases of wine were produced and available for
sale at the tasting room.
The wine
This wine has a Silky mid palate with hints of Apple at
the start and migrating to Pear.
